Thai sweet chilli and basil stir fry

2 x chicken breasts (can use pork, beef or shrimps)
2 garlic diced garlic cloves
5-6 sliced spring onions
2-3 thinly sliced red/orange/yellow bell peppers
good handful of fresh basil leaves, chopped
2 tbsp sweet chili sauce
1 tbsp red chili paste
1 pack egg noodles or rice stick noodles
1 tbsp light soy sauce
2 tbsp rice vinegar
2 tbsp oil

Bring water to boil and add rice stick noodles for 3/4 minutes... Drain and rinse, set aside

In wok or large frying pan, heat on high heat 2 tbsp oil
add onions and garlic
add meat and stir for 2 - 3 minutes
add sliced bell peppers, sweet chili sauce, rice vinegar, soy sauce, and red chili paste and stir 2 - 3 minutes
add basil leaves and stir 2 minutes

Makes 4 servings
Place noodles in bowl and add stir fry mixture over noodles
